Keto Chicken Marsala & Cauliflower Rice

Pre-made Marsala Sauce is one of my all-time greatest discoveries! The juicy chicken tenders cook so fast, you’ll want to stay close to the stove and keep an eye on them to avoid overcooking.
Ingredients (4 servings)
1 lb chicken tenders (about 10-12 tenders)
1 jar Marsala Sauce (I use Trader Joe’s brand)
1.5 cups Riced Cauliflower (seasoned)
2 TB olive oil
Cook chicken tenders on low-medium heat in olive oil until still slightly pink inside (about 3 mins per side). Pour Marsala Sauce over the chicken, stirring slightly to coat all the chicken. Reduce heat to low and cook for another 4-5 minutes. Meanwhile, heat the Riced Cauliflower in a pan with a little olive oil. Assemble and serve with an avocado.
