Keto Chocolate Chip Cookies

An incredibly simple cookie to make, loaded with chocolate chips and yumminess! After years of multiple attempts, I’ve finally found a recipe that has my entire family asking when I’ll make more!
The carbs come partly from the almond flour and mostly from the chocolate chips. This is the lowest carb and best tasting cookie recipe I’ve found, but at 4g carb per cookie, the carb count does add up quickly, particularly if you’re trying to stay under 25g carb per day. When I make them, I’ll usually have one at lunch with my protein and fat, and skip my vegetables at that meal. Probably not the most sound nutrition advice, but as I try to keep my carb count to about 7g per meal (at 3 meals a day, so 7 x 3 = 21g/day), it’s the way I’ve found to have a treat and not gain any weight. And…these cookies are worth it 🙂
Ingredients (24 cookies)
1 1/2 cups almond flour, Check prices on Amazon
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp xantham gum, Check prices on Amazon
1/2 cup butter, melted
3/4 cup erythritol, Check prices on Amazon
1 tsp vanilla extract
1 egg, beaten
3/4 cup sugar free chocolate chips (I use Stevia Sweetened Chocolate Chips, Check prices on Amazon)
Step 1: Preheat oven to 355 degrees Fahrenheit.
Step 2: Mix together all dry ingredients in a bowl (almond flour, baking powder, salt, xantham gum) using a fork to break up all lumps until smooth.
Step 3: In a large bowl, beat together melted butter and erythritol. Add vanilla and egg and beat for only 10-15 seconds.
Step 4: Add dry ingredient mixture to egg mixture, beating only until blended. Add chocolate chips by hand, mixing the chips as evenly as possible throughout the dough.
For a thin cookie, proceed to next step. For a rounder cookie, refrigerate dough for 20-30 minutes.
Step 5: Form into 24 small balls (about 1.5 inches wide), and lay onto lightly sprayed cookie sheets.
Step 6: Bake for 10-12 minutes. Cookies will be very soft when you take them out of the oven. Allow them to cool and harden for at least 15-20 minutes before removing from pan.
