Keto Taco Salad

An incredibly simple, easy to prepare taco salad layered with yumminess! I use 85% lean ground beef, fresh romaine lettuce and sharp cheddar cheese – a great flavor combination!

Ingredients (4 servings)

  • 1 Lb ground beef (= 16 oz)
  • 1/3-1/2 cup chopped onion (onions are carbs; you don’t need a lot)
  • 1/2 cup salsa
  • 2 TB taco seasoning mix (or 1/2 a Trader Joe taco seasoning packet)
  • 1-2 TB chopped cilantro

Per serving:
Romaine lettuce (3 leaves per serving)
4 oz ground beef mixture
1/3 cup grated cheddar cheese
1/2 avocado, diced
1 TB salsa to garnish

Step 1: Cook onions over medium-low heat until onions are translucent.

Step 2: Add beef and cook to the point where the meat turns from pink to brown. Lower the heat.

Step 3: Add salsa, taco seasoning and chopped cilantro.

Step 4: Stir well and simmer on low heat for 5 minutes.

Step 5: Lay the meat on a bed of lettuce and top with cheese, avocado, and cilantro.
